Pumpkin Soup With Sea Food At Home By Roopa Nabar | Coastal Kitchen | India Food Network

200 gms Pumpkin
1 Onion finely chopped
1 tbsp minced garlic
1 cup Mixed Seafood (prawns clams, squid rings and fish cubes)
3 cups veg stock
11/2 cup Coconut Milk
1 tsp Curry Powder
1 tsp Chilli Flakes
1 tsp Coriander Powder
1/2 cup Slices of Tender Coconut
Salt (To Taste)
Coconut Oil

Method: take a deep pan and heat the oil, add the chopped onion and garlic, fry till brown.
Add the pumpkin and fry for 1min, add the curried powder, chilli flakes and coriander powder.
Add salt and fry for 1min, add the stock and cook till pumpkin goes soft.
Puree the mixture.
Take another pan and add the pureed mixture. Adjust the consistency and cook for 5mins.
Add the seafood mix cook for 5mins
Add the coconut milk and slices, cook further for 2min
Serve.
