Pumpkin Spice Palmiers a.k.a. Elephant Ear Cookies!

Learn how to make palmiers with puff pastry, sugar, and saltplus pumpkin spice for some fall-time flair! I absolutely LOVE French palmiers a.k.a. elephant ear cookies, and this 3-ingredient puff pastry palmiers recipe makes them so easy to enjoy at home. Comforting, light, and flakytheyre like a cookie-meets-croissant!

First, Im sharing how to make pumpkin pie spice at homea staple in my kitchen throughout the fall season. Just mix cinnamon, ginger, nutmeg, and cloves, and youve got your very own homemade pumpkin spice mix!

Then, Ill show you how to make palmiers using frozen puff pastry dough. Just roll out the sheet of dough with plenty of sugar, roll up the edges like elephant ears, then slice and bake your palmier cookies!

I decided to make pumpkin palmiers to ring in the fall season, or you can skip the pumpkin spice and make classic French palmiers cookies instead. (Or use different seasonings to make different flavors altogether!)
