The authentic and lip-smacking Punjabi Chole PUNJABI CHOLEIngredients2 cups soaked chickepeas, drained3 dried gooseberry (amla) pieces2 tea bags3-4 tbsps ghee2 green chilllies, slit1½ tbsps ginger-garlic paste 1 cup fresh tomato puree2 tbsps chole masalaSalt to taste2 tbsps chopped fresh coriander2 medium tomatoes, quarteredMethod1. Transfer the drained chickpeas in a pressure cooker, add amla, tea bags and 4 cups water.2. Close the lid and pressure cook till 6-7 whistles are released on medium heat. Open the lid once the pressure settles completely and discard the tea bags.3. Heat ghee in a nonstick pan. Add green chillies, ginger-garlic paste and sauté on medium heat till the raw flavor of ginger and garlic goes away. 4. Add tomato puree and cook till the fat separates. Add chole masala, mix well and cook for a minute.5. Add the cooked chickepeas, salt and mix well. Bring to a boil.6. Add coriander, tomatoes and mix well. Cook for 2-3 minutes.7.
