Garlic cloves, 1 inch Ginger (peeled & roughly sliced) 2-3 no. Green chillies (less spicy & broken in half) 2 tsp Degi red chilli powder, 1 tsp Turmeric powder, 1 tbsp Coriander powder, For Masala1 tbsp Black peppercorns, tbsp Coriander seeds, 4 no. Black cardamom, 2-3 no. Cloves, For Tadka 1 tbsp Oil, tbsp Ghee, 1 inch Ginger, julienne, 1 tbsp Tender Coriander stems, chopped, 2-3 no. Green chillies (slit into half without seeds) tsp Dry fenugreek leaves, optional, Cooked Mutton, 1 tsp Prepared Masala, 2-3 tbsp Coriander leaves, finely chopped, For GarnishCoriander sprig, Process For Cooking Mutton In a cooker, add oil, ghee, once it's hot, add onion and saute it until golden in color.Add mutton and saute it for 2-3 minutes on high flames.Add salt to taste, prepared paste and cook it for a while until tender on medium flames.Add prepared masala, water, cover it with a lid and cook it for 4-5 whistles until cooked well.Keep it aside for further use.For PasteIn a bowl, add curd, garlic clove, ginger, green chillies, degi red chili powder and coriander powder. Transfer it to a mixer grinder and make a smooth paste.Keep it aside for further use.For Masala In a mortar pestle, add black peppercorns, Coriander seeds, black cardamom, cloves and grind it coarsely.Keep it aside for further use. For TadkaIn a kadai, heat oil, ghee, add ginger, coriander stems, green chillies, dry fenugreek leaves and saute it for 2-3 minutes on medium flames.
