Punjabi Sweet mango pickle #Mangopickle #PunjabiStyle #RawMangoPickle Preparation time : 10 mins Cooking time : 15 mins Serving : 4 pax Ingredient quantity Cumin seed 1 tsp Coriander seed 1 tbsp Mustard seed 1 tsp Fenugreek seed 1 tsp Fennel seed 2 tsp Jaggery 1 cup Water 2 cup Raw mango 2 nos Mustard oil 3 tbsp Lg hing a pinch Turmeric powder ½ tsp Kalonji 1 tsp Red chilli powder 2 tsp Salt 1 ½ tsp Black salt 1 tsp Vinegar 2 tbsp Method : 1. In a kadhai , add cumin seed ,coriander seed , mustard seed , fenugreek seed fennel seed and dry roast it for about 1 min on a low flame . 2. Transfer the roasted spices into the blender , and grind it coarsely , keep it aside . 3. Heat a kadhai , add jaggery , water cook until jaggery gets melt , transfer in a bowl , keep it aside . 4. Now tak raw mango , peel and cut it into long thin strips . 5. Heat a pan , add oil , lg hing , turmeric powder , mango strips allow it to cook on a low flame . 6. Now add kalonji and sauté it for a min . 7. Now add coarsely grinded spice , red chilli powder and sauté it nicely for 3 mins . 8. Now add jaggery syrup using strainer . 9. Now add salt , black salt , vinegar , give a stir . 10. Cover with a lid allow it to cook until it reaches a bit more than 1 string consistency . 11. Once the jaggery syrup reaches its desired consistency ,off the flame . 12. Transfer it in a bowl or serving bowl . 13. Store it at a cool place for 2 days . 14. Ready to serve along with rotis , rice and curries as an accompaniment .
