Pyaz ki sabzi is basically a stuffed onion sabzi which is made with small onions, spices and chopped onions, tomatoes and topped with curd to balance the flavor.

Ingredient Quantity
For Masala:
Coriander powder 1 tbsp
Dry mango powder 1 tsp
Black salt ½ tsp
Red chilli powder 1 tsp
Garam masala powder 1 tsp
Turmeric powder ½ tsp
Salt to taste
For Sabzi:
Onion (Small Size) 250 gm.
Mustard Oil ¼ cup
Asafoetida 1 tsp
Cumin seed 1 tsp
Kalonji 1 tsp
Onion chopped 2 no.
Garlic chopped 1 tbsp
Ginger chopped 1 tbsp
Tomato chopped 2 no.
Salt to taste
Green chilli slit 5-6 no.
Coriander powder 1 tbsp
Garam masala powder 1 tsp
Dry mango powder ½ tsp
Turmeric powder ½ tsp
Yogurt 3-4 no.
Water 1 cup

Method:
1. Take bowl, add coriander powder, dry mango powder, black salt, red chilli powder, garam masala powder, turmeric powder and salt and mix well. Keep it aside.
2. Peel the onion and make a cross cut to divide it into 4 parts but do not cut it completely, the onion should be uncut from the bottom.
3. Now add the prepared masala inside the onion and keep it aside.
4. Heat mustard oil in a pan, add asafoetida, cumin seeds and kallonji, mix well and sauté for 1 min.
5. Add chopped onion and mix well.
6. Add chopped garlic and ginger, mix well and sauté for 2 min.
7. Add chopped tomato and mix well.
8. Add salt, mix well and sauté for 2-3 min.
9. Add remaining powder masala and green chilli slit, mix well and sauté for 1 min.
10. Add coriander powder, garam masala powder, dry mango powder and turmeric powder, mix well and sauté for 2-3 min.
11. Add onions, cover and cook for 3-4 min. stir in between.
12. After 3-4 min. remove the lid and mix well.
13. Add yogurt, mix well and sauté for 2 min.
14. Add water, mix well and cook for 3-4 min.
15. Remove in serving bowl and serve hot.
