Chicken Pulao is a rice and chicken based dish made with cloves, cardamom, garlic and caramelised onion. The dish is authentic Indian food and easily made if you need something on the go.QUICK CHICKEN PULAVIngredients250 grams boneless chicken breasts, cut into ½ inch cubes1½ cups Basmati rice, soaked for 30 minutes 2 tablespoons ghee 1 inch cinnamon 1 bay leaf 3-4 green cardamoms 3-4 cloves1 teaspoon cumin seeds (jeera)2-3 green chillies, slit 1½ tablespoons ginger-garlic paste ½ teaspoon asafoetida (hing)2 medium onions, sliced3 cups chicken stockSalt to tasteFresh coriander sprigs for garnishingRoasted papad for serving Yogurt for servingMethod1. Heat ghee in a deep non-stick pan. Add cinnamon, bay leaf, cardamoms, cloves and cumin seeds and sauté till cumin seeds change colour. 2. Add green chillies and sauté for 30 seconds. Add ginger-garlic paste and sauté for 1 minute. 3. Add asafoetida, mix, cover and cook for 2-3 minutes. Add onions and sauté for 1 minute. Cover and cook till golden brown.4. Add chicken and sauté for 1-2 minutes. Add drained rice and sauté for 1 minute. Add 3 cups chicken stock and salt, mix, cover and cook till the rice is done. 5.
