Marinated shrimps deep-fried and served with a mayonnaise-sweet chilli sauce.QUICK FRIED SHRIMPSIngredients200 gms shrimps, cleanedOil to deep fry2 tsps ginger-garlic pasteSalt to taste2 tbsps mayonnaise 1 tbsp Thai sweet chilli sauce2 tsps chilli sauce1 stalk spring onion greensA few iceberg lettuce leaves1 tbsp cornstarchMethod1. Heat sufficient oil in a deep pan.2. Put ginger-garlic paste in a bowl. Add shrimps and salt and mix. Keep the bowl in the refrigerator to marinate for 15 minutes.3. Put mayonnaise in another bowl, add Thai sweet chilli sauce and chilli sauce and mix well.4. Chop spring onion greens finely. Tear iceberg lettuce leaves.5. Take the shrimps out of the refrigerator, add cornstarch and mix lightly. Slide the shrimps, one by one, into the hot oil and deep-fry till lightly coloured. Drain on absorbent paper.6. Put 2-3 tbsps of the mayonnaise mixture into a clean bowl, add the fried shrimps and mix.7. Arrange the lettuce leaves on a serving plate, place the shrimps over them.
