Quick Fried Shrimps | Cooksmart | Sanjeev Kapoor Khazana

Marinated shrimps deep-fried and served with a mayonnaise-sweet chilli sauce.

QUICK FRIED SHRIMPS

Ingredients

200 gms shrimps, cleaned
Oil to deep fry
2 tsps ginger-garlic paste
Salt to taste
2 tbsps mayonnaise
1 tbsp Thai sweet chilli sauce
2 tsps chilli sauce
1 stalk spring onion greens
A few iceberg lettuce leaves
1 tbsp cornstarch

Method

1. Heat sufficient oil in a deep pan.
2. Put ginger-garlic paste in a bowl. Add shrimps and salt and mix. Keep the bowl in the refrigerator to marinate for 15 minutes.
3. Put mayonnaise in another bowl, add Thai sweet chilli sauce and chilli sauce and mix well.
4. Chop spring onion greens finely. Tear iceberg lettuce leaves.
5. Take the shrimps out of the refrigerator, add cornstarch and mix lightly. Slide the shrimps, one by one, into the hot oil and deep-fry till lightly coloured. Drain on absorbent paper.
6. Put 2-3 tbsps of the mayonnaise mixture into a clean bowl, add the fried shrimps and mix.
7. Arrange the lettuce leaves on a serving plate, place the shrimps over them. Garnish with spring onion greens and serve hot.
