A dessert that has won hearts of a lot people but it does take time to make this beauty but a few simple tricks and you have a quick shah tukda ready!

QUICK SHAHI TUKDA

Ingredients

4-5 white bread slices
5-6 cups milk
¼ cup milk powder
¼ cup condensed milk
¼ tsp green cardamom powder
Ghee for shallow frying
Crushed dried rose petals for garnish
5-6 pistachios, blanched, peeled and slivered
Slivered almonds for garnish
Saffron strands for garnish

Method

1. Heat milk in wide non-stick pan, bring it to a boil, reduce the heat to low and cook till the milk reduces the half, keep stirring and scraping the sides continuously.
2. Mix together milk powder along with 2 tbsps reduced milk and add into the pan and mix well. Cook for 2-3 minutes or till thickened.
3. Add condensed milk, mix and cook for 1-2 minutes and mix well. Switch the heat off and transfer into a large bowl, add green cardamom powder, mix and set aside to cool.
4. Meanwhile, cut bread slices with a round cookie cutter and halve the roundels.
5. Heat sufficient ghee in a non-stick pan, shallow fry the bread slices till golden brown and crisp on both sides. Drain on absorbent paper.
6. Pour the cooled rabdi on a serving plate, place the bread slices, drizzle rabdi and garnish with dried rose petals, pistachios, almonds and saffron strands. Serve.
