A dessert that has won hearts of a lot people but it does take time to make this beauty but a few simple tricks and you have a quick shah tukda ready!QUICK SHAHI TUKDAIngredients4-5 white bread slices5-6 cups milk¼ cup milk powder¼ cup condensed milk¼ tsp green cardamom powderGhee for shallow fryingCrushed dried rose petals for garnish5-6 pistachios, blanched, peeled and sliveredSlivered almonds for garnishSaffron strands for garnishMethod1. Heat milk in wide non-stick pan, bring it to a boil, reduce the heat to low and cook till the milk reduces the half, keep stirring and scraping the sides continuously.2. Mix together milk powder along with 2 tbsps reduced milk and add into the pan and mix well. Cook for 2-3 minutes or till thickened.3. Add condensed milk, mix and cook for 1-2 minutes and mix well. Switch the heat off and transfer into a large bowl, add green cardamom powder, mix and set aside to cool.4. Meanwhile, cut bread slices with a round cookie cutter and halve the roundels.5. Heat sufficient ghee in a non-stick pan, shallow fry the bread slices till golden brown and crisp on both sides. Drain on absorbent paper.6. Pour the cooled rabdi on a serving plate, place the bread slices, drizzle rabdi and garnish with dried rose petals, pistachios, almonds and saffron strands.
