A quick and easy breakfast recipe of Uttapam made using semolina and yogurt.QUICK UTTAPAMIngredients1 cup semolina (suji/rawa)1 cup yogurt¼ teaspoon soda bicarbonateSalt to tasteOil as required1 small onion for greasing1 medium tomato, finely chopped½ medium green capsicum, finely chopped1 medium onion, finely chopped1 small carrot, peeled and gratedRed chilli powder for sprinklingChopped fresh coriander leaves as required30 grams processed cheeseSambhar for serving Coconut chutney for servingMethod1. Mix together semolina, yogurt, soda bicarbonate and salt in a bowl. Set aside for 20-30 minutes.2. To prepare one uttapam, heat a non-stick tawa. Drizzle ½ teaspoon oil and rub small onion well. Pour a ladleful of batter and spread to make a thick disc. Put some tomato, green capsicum, onion and carrot. 3. Sprinkle chilli powder, put some coriander leaves and grate some cheese on top and cook from both sides till golden brown.4. Serve hot with sambhar and coconut chutney.
