Simple, soft and chewy cookies made with the goodness of quinoa combined with peanut butter to add a punch of nutty flavour is definitely going to be your favourite in no time.QUINOA PEANUT BUTTER SOFT COOKIESIngredients¾ cup cooked quinoa1 cup peanut butter½ cup honey1 tsp vanilla essence1 egg½ cup whole wheat flour (gehun ka atta)1 tsp baking sodaA pinch of salt½ tsp baking powder2 tbsps finger millet (ragi) flourPistachios powder for sprinklingMethod1. Preheat the oven at 180ºC.2. Take peanut butter in a large bowl. Add honey and vanilla essence and beat with an electric beater till well combined.3. Break in the egg into it and continue to beat for 1 minute. 4. Sift the whole wheat flour, salt, baking soda and baking powder directly into the bowl. Add the quinoa and beat till well combined.5. Stir in the finger millet flour and mix well.6. Take small portions of the mixture and shape each into a ball. Flatten them slightly and arrange on a lined baking tray. Make patterns over each cookie using a fork and sprinkle pistachios powder. Place the baking tray in the preheated oven and bake for 10-12 minutes. 7. Bring the cookies out of the oven and allow to cool slightly. Arrange on a cooling wire rack and allow to cool completely.8. Serve as required.
