A healthier twist to an already healthy dish, Quinoa and Vegetable Pulao transforms into a tasty, flavourful dish for health freaks!QUINOA AND VEGETABLE PULAOIngredients1 cup quinoa, soaked for 1 hour7-8 button mushrooms¼ cup green peas1½ tsps oil2 spring onions with greens1 tsp cumin seeds4-5 cloves5-6 garlic cloves4 green chillies2 cups vegetable stockSalt to taste1 cup milkMethod1. Heat oil in a non-stick pan.2. Slice spring onion bulbs. Reserve the greens.3. Add cumin seeds, cloves and garlic cloves to the pan.4. Slit green chillies without cutting through and add alongwith sliced spring onion bulbs and saute well.5. Chop spring onion greens and add. 6. Quarter mushrooms and add. Toss and saute well.7. Add quinoa and mix well. Add vegetable stock, salt, stir to mix and cook.8. Add green peas and mix well. Add milk, stir to mix, cover and cook on medium heat till fully done.
