A tasty dish made with gram flour, yogurt and spices. It is an easy dish which goes very well with any Indian bread or steamed rice and can be prepared in a couple of minutes. RAJASTHANI KADHIIngredients1½ cups sour yogurt4 tablespoons gram flour (besan)1 tablespoon ginger-garlic-green chilli pasteSalt to taste¼ teaspoon turmeric powder½ teaspoon red chilli powder3 tablespoons ghee 1 inch cinnamon3-4 cloves1 bay leaf6-8 black peppercorns½ teaspoon fenugreek seeds (methi dana)1 teaspoon cumin seeds (jeera)A pinch of asafoetida½ tablespoon chopped ginger2 medium onions, slicedFresh coriander sprig for garnishing Method 1. Whisk together yogurt, gram flour, ginger-garlic-green chilli paste, salt, turmeric powder and chilli powder in a bowl. 2. Heat ghee in a deep non-stick pan. Add cinnamon, cloves, bay leaf, peppercorns, fenugreek seeds, cumin seeds, asafoetida, ginger and onions, mix and sauté till onions turn translucent. 3. Add yogurt mixture and mix well. Add 2 cups water and mix again. Add salt, mix and bring to a boil. 4. Garnish with coriander sprig and serve hot with steamed rice.
