Rajasthani Kadhi | Sanjeev Kapoor Khazana

A tasty dish made with gram flour, yogurt and spices. It is an easy dish which goes very well with any Indian bread or steamed rice and can be prepared in a couple of minutes.

RAJASTHANI KADHI

Ingredients

1½ cups sour yogurt
4 tablespoons gram flour (besan)
1 tablespoon ginger-garlic-green chilli paste
Salt to taste
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
3 tablespoons ghee
1 inch cinnamon
3-4 cloves
1 bay leaf
6-8 black peppercorns
½ teaspoon fenugreek seeds (methi dana)
1 teaspoon cumin seeds (jeera)
A pinch of asafoetida
½ tablespoon chopped ginger
2 medium onions, sliced
Fresh coriander sprig for garnishing

Method

1. Whisk together yogurt, gram flour, ginger-garlic-green chilli paste, salt, turmeric powder and chilli powder in a bowl.
2. Heat ghee in a deep non-stick pan. Add cinnamon, cloves, bay leaf, peppercorns, fenugreek seeds, cumin seeds, asafoetida, ginger and onions, mix and sauté till onions turn translucent.
3. Add yogurt mixture and mix well. Add 2 cups water and mix again. Add salt, mix and bring to a boil.
4. Garnish with coriander sprig and serve hot with steamed rice.
