A thepla which is very nutritious and gets done in a jiffy. Serve it hot and enjoy. Definitely going to be a regular feature if you try it once.
RAJGIRE KA THEPLA
A healthy and a quick snack recipe using amaranth.

Ingredients

1½ cups amaranth (rajgira) flour + for dusting
½ cup whole wheat flour
1 tbsp ginger-green chilli paste
½ tsp turmeric powder
½ tsp red chilli powder
1½ tsps Tata Sampann Kasuri Methi
2 tsps chopped jaggery
2 tbsps chopped freshcoriander
1 tsp dried mango powder
Salt to taste
1 tbsp oil + to drizzle
Pickle to serve

Method

1. Take rajgira flour in a bowl, add whole wheat flour and mix well.
2. Add ginger-green chilli paste, turmeric powder, red chilli powder, Tata Sampann Kasuri Methi, jaggery, coriander leaves, dried mango powder, salt and oil.
3. Add 1¼ cups water and knead to soft dough. Set aside for 30 minutes.
4. Dust some rajgira flour on the surface, divide the dough into equal portions and roll into semi thick disc.
5. Heat a non-stick tawa and place the disc on it. Roast on medium heat till underside is done.
6. Flip and drizzle some oil and cook the other side as well. Flip again and drizzle some more oil.
7. Serve hot with pickle.
