Rajgira Thalipeeth | Navratri Special | Sanjeev Kapoor Khazana

Rajgira also known as amaranth is a very popular ingredient had during fasts. This pancake is crisp and light. Best had with plain yogurt.

RAJGIRA THALIPEETH

Ingredients

1 cup amaranth (rajgira) flour
2 large potatoes, boiled, peeled and mashed
1 tablespoon chopped fresh coriander leaves
Sea salt to taste
2-3 tablespoons roasted and crushed peanuts
1 tablespoon ginger-green chilli paste
Ghee for cooking

Method

1. Mix together potatoes, coriander leaves, sea salt, peanuts and ginger-green chilli paste in a bowl. Add flour, little by little, and knead to a soft dough.
2. Divide the dough into equal portions. Cover each portion in a zip lock bag and roll out into thin discs or thalipeeths.
3. Heat a non-stick tawa. Place the thalipeeth on it, apply some ghee on top and cook for 3-4 minutes.
4. Serve hot with raita.
