I derived the recipe after umpteen trial and errors; so today I can confidently declare that this Rava Idli recipe is fool-proof.
Also, the daily challenge of planning a breakfast is easily solved with my rava Idli recipe. No roasting of rava is required. Therefore it’s easier than Rava Upma! Almost all the required ingredients are commonly available at home.
“It is a specialty of the state of Karnataka in India. It was invented by the popular restaurant chain, Mavalli Tiffin Rooms (MTR) of Bangalore. According to them, during World War II, when rice, which is the staple item used in idli, was in short supply, they experimented in making idli using semolina and created rava idli.

Rava idli translates to semolina idli in the Kannada language. It is usually found in restaurants that serve Udupi cuisine. Rava idli is served hot and is to be eaten along with saagu and coconut chutney. A dash of ghee poured on the top of rava idli adds to the overall taste.”

Rava Idli:
Ingredients:
Rava - 1 cup
Curd - 1 cup
Til oil - 5 or 6 tbsp
Mustard seeds - 1 tsp
Grated ginger - ½ tsp
Finely chopped green chillies - 2 in number
Chana dal - 1tsp
Urad dal - tsp
Asaefotida - as required
Curry leaves - some
Chopped cashews - as required
Eno - 1 sachet
Salt to taste
Method:
Mix Rava and curd together with salt in a mixing bowl
With a balloon whisker, briskly beat till the Rava Idli batter is smooth and without lumps - add few drops of water to get a smooth consistency
Allow the Rava Idli batter to rest for 10 mins
Meanwhile heat til oil in a pan
Splutter mustard seeds
Then add chana dal and urad dal and sauté till golden
Add grated ginger and chopped green chilies and sauté
Add asaefotida
Now add chopped cashews and stir fry till golden
Add curry leaves and stir
Switch off flame
Now add the tempering to the now rested Rava Idli batter
Adjust with drops of water if required- should look like Idli batter
Steam the Rava Idlis in a preheated Idli steamer for 10 mins or so
Serve with any chutney of your choice
