Rava Upma

Ingredients:

Rava/Sooji/Semolina - 1 cup

Mustard seeds - 1 tsp

Bengal Gram Dal - 2 tsp

Asaefotida - ¼ tsp

Cashewnuts - as reqd

Green chillies - 2

Ginger - 1 inch

Onions - 2 medium

Carrots - 1 medium

Curry leaves - 1 handful

Ghee/oil - 4 or 5 tsps

Salt to taste

3 cups boiling water

Method:

In a flat pan dry roast Rava/Semolina till light golden - set aside

Chop green chillies, ginger and onions finely - keep aside

Grate carrot and keep aside

In a pan, heat 1 tsp ghee and fry the cashews till golden - set aside

In a big pan, heat few tsps of ghee

Crackle mustard seeds

Add bengal Gram Dal and fry

Add asaefotida and curry leaves

Now add the chopped green chillies and ginger - saute

Add the chopped onions and stir-fry till translucent

Now add the grated carrots and saute

Add 3 cups of boiling hot water to the cooked vegetables

Add salt to taste

When everything boils together add the roasted Rava 

Let everything come together over sim flame

Finally add the roasted cashewnuts and toss lightly

Serve with any chutney after adding a dash of lemon juice, if required
