REFRESHING CARROT JUICE - (Serves - 4)Ingredients10-12 carrots, peeled and cut into halves1 tbsp finely chopped ginger7-8 tbsps sugar2 tbsps fresh mint leaves1 lemonIce cubes as requiredMethod1. Heat 2 cups water in a non-stick pan. Add ginger and sugar and stir well. Let it cook till the sugar dissolves.2. Place the carrots in a juicer and squeeze out the juice alongwith mint leaves.3. Squeeze out juice of lemon into individual glasses, add 3 tbsps ginger sugar syrup, ice cubes and top with the carrot juice. Stir well.4. Serve chilled.
