The aroma and taste of roasted bell pepper, sun dried tomatoes, fresh thyme, and garlic, all blended with olive oil to create a supreme Roasted Bell Pepper Pesto is delicious and super easy to make.

ROASTED BELL PEPPER PESTO

Ingredients

2 medium red capsicums (bell pepper)
2 tbsps extra virgin olive oil + for drizzling + for garnish
2-3 sun dried tomatoes
3-4 garlic cloves
Salt to taste
Black pepper powder to taste
1 tbsp pine nuts
1-2 fresh thyme sprigs + for garnish
1½ tbsps parmesan cheese powder

Method

1. Preheat the oven at 200ºC.
2. Drizzle some olive oil over the red capsicums and apply it evenly. Place them on a baking tray and place it in the preheated oven. Roast for 15-20 minutes.
3. Bring the roasted red capsicums out of the oven and allow to cool to room temperature.
4. Peel the capsicums and roughly chop them and transfer them in a blender jar. Add the sun dried tomatoes, garlic cloves, salt, black pepper powder, pine nuts, pluck the leaves of thyme and add into the blender jar. Add 2 tbsps olive oil and parmesan cheese powder and blend to a fine paste.
5. Transfer the paste into a serving bowl, garnish with olive oil and thyme sprig.
