Sabudana vada - the crispy, fried vada made from sabudana pearls, mashed potatoes and peanuts.Ingredients for Sago VadaMedium size Sago pearls – 1 cup (150 grams_ (soaked)Potatoes – 5 (300 grams) boiledPeanuts – ½ cup (100 grams) (roasted and coarsely ground)Green coriander – 2 to 3 tbsp (finely chopped)Green chilly – 2 (finely chopped)Ginger paste – 1 tspBlack pepper – 8 to 10 (coarsely ground)Oil – to fryDirectionsGetting ready:1.Soak the sago pearls for 2 hours and then drain out the excess water from them. In another bowl, peel and finely mash the boiled potatoes.Making:2.In a big mixing bowl combine sago pearls, potatoes, sendha salt, ginger, green chilly, ground black pepper, green coriander and peanuts for making vada.3.Heat some oil in a wok. When the oil is heated well, pinch some mixture, roll into round shape and then flatten into a vada and gently slide in the oil. Place as many vadas as possible in the wok and fry them until they become golden brown in color. Transfer them on napkin paper placed on a plate.
