SAFED ALOOIngredients4 medium potatoes, boiled and peeled10-12 almonds, blanched and peeled1 tbsp poppy seeds¾ cup yogurt½ cup mawaSalt to taste¼ tsp green cardamom powder2 tbsps oil4 bor chillies2 tsps grated ginger1 tbsp lemon juiceCoriander sprig for garnishMethod 1. Cut potatoes into ½ inch pieces and set aside.2. In a blender jar, add almonds and poppy seeds. Grind them to a fine powder and set aside.3. In a bowl, add yogurt and the prepared fine powder, mawa, salt and green cardamom powder. Mix till well combined and set aside.4. Heat oil in a non-stick pan, add red chillies and ginger. Sauté for 1 minute. Add the potatoes and sauté for 2-3 minutes on medium heat.5. Add the prepared mixture and mix well. Cook for 4-5 minutes on medium heat.6. Add lemon juice and mix well. Take it off the heat and transfer to a serving bowl.7.
