A popular recipe from the Parsi cuisine.SALLI GOSHTIngredients600 grams mutton, cut into ½ inch pieces on the bone Potato salli for garnishing 2 inch ginger, chopped1 tablespoon chopped garlic8-10 dried red chillies, soaked1 tablespoon cumin seeds (jeera)2 tablespoons oil2 medium onions, chopped1 medium tomato, choppedSalt to taste1 teaspoon red chili powder½ teaspoon turmeric powder10-12 dried apricots, soaked 2 teaspoons grated jaggery1 tablespoon malt vinegar1 teaspoon vinegar Method1. Blend together ginger, garlic, red chillies and cumin seeds with a little water to a fine paste. 2. Heat oil in a pressure cooker. Add onions and sauté until they turn light brown. Add tomato and salt and mix well.3. Add the prepared paste, chilli powder and turmeric powder, mix and sauté till the tomatoes turn pulpy. 4. Add mutton pieces, mix and cook for 2-3 minutes. Add 2 cups water and soaked apricots along with the water, stir, cover and cook till the pressure is released 4 times. 5. Add jaggery, malt vinegar, vinegar and salt, mix well and cook till the jaggery melts. 6. Garnish with potato salli and serve hot.
