Marinated salmon steak cooked and served with creamy coconut sauce.SALMON IN COCONUT SAUCEIngredients1 thick salmon steak1 cup thick coconut milk4 tbsps oil1 medium onion, choppedSalt to tasteA pinch of garam masala powder3 tbsps lemon juice1 large tomato, chopped¼ tsp red chilli powder¼ tsp paprika powder¼ tsp turmeric powder¼ tsp crushed fresh green chillies2 tbsps boiled, peeled and mashed potatoes2 tbsps chopped spring onion greensMethod1. Heat 2 tbsps oil in a pan, add onions and saute.2. Sprinkle salt and garam masala over the salmon steak. Pour lemon juice over the steak.3. When the onions are lightly coloured add tomatoes, mix and saute for 2 minutes.4. Add red chilli powder, paprika powder and turmeric powder, mix and saute for 2 minutes.5. Add crushed green chillies and thick coconut milk and mix. Add mashed potatoes and mix well and saute for 2 minutes.6. Add salt and mix well. Take the pan off the heat.7. Heat the remaining oil in another pan, add the salmon steak, skin side facing the pan and cook, cover with the pan with the sauce.8. Add spring onion greens to the sauce and mix.9. When the underside of the salmon steak is done, gently flip it over and cook the other side.10.
