Salted Caramel Pannacotta | Sanjeev Kapoor Khazana

SALTED CARAMEL PANNACOTTA

Ingredients

100 grams sugar
A pinch of sea salt
300 ml fresh cream
100 ml milk
2 tablespoons gelatine
Fresh mint sprigs for garnishing

Method

1. Heat sugar in a non-stick pan. Add some water, mix and let the sugar caramelise.
2. Add cream and milk, mix and cook for a minute. Remove from heat and set aside.
3. Put gelatine in a bowl. Add some water and set aside to bloom.
4. Mel the gelatine in a microwave oven, add to the caramelised sugar mixture and whisk well.
5. Divide the mixture into individual mini serving bowls. Mix a little to remove the bubbles and refrigerate till set.
6. Top with sea salt, garnish with mint sprigs and serve immediately.
