A flavourful chicken curry that comes all the way from Satara and is a must-try for everyone!SATARA STYLE CHICKEN CURRYIngredients750 grams chicken, cut into 2 inch pieces on the boneMasala paste2 tbsps oil1 large onion, sliced8-10 garlic cloves1 inch ginger, chopped1 cup grated dried coconut4-5 fresh coriander sprigsCurry2-3 tbsps oil1 large onion, chopped1½ tbsps kanda-lasoon masala2 tsps red chilli powder½ tsp turmeric powder1 tsp garam masala powder Salt to tasteFresh coriander sprig for garnishMethod1. Heat oil in a non-stick pan. Add onion, garlic, and ginger and sauté till golden. Add coconut and sauté till it turns golden. Take the pan off the heat and allow to cool slightly. 2. Put the roasted mixture into a blender jar, add coriander sprigs, and 1 cup water and blend to a fine paste.3. To make the curry, heat oil in a deep non-stick pan. Add onion and sauté till it turns golden brown. Add the prepared paste and mix well. Cover and cook till the oil separates. 4. Add kanda-lasoon masala, red chilli powder, turmeric powder and garam masala powder and sauté for a minute.5. Add the chicken and salt and sauté on high heat for 3-4 minutes. Add 1½ cups water, mix, cover and cook on medium heat for 15-20 minutes or till the chicken is cooked completely. 6.
