Egg Korma

Ingredients for Fried Eggs:
Boiled eggs 7-8
Red chili powder 1 tsp
Turmeric powder 1/2 tsp
Salt 1 tsp
Oil (for frying) 1/4 cup

Ingredients for Egg Korma:
Oil 1/4 cup
Green cardamoms 4-5
Cinnamon sticks 1-2
Black cardamom 1-2
Cloves 2-3
Brown onion 1 cup
Yogurt 1 cup
Red chili powder 1 tbsp
Salt 1 tsp
Turmeric powder 1/2 tsp
Coriander powder 1 tbsp
Cumin powder 1 tbsp
Fried eggs
Green coriander (chopped) for garnishing

Directions for Fried Eggs Preparation:
1. Take the boiled eggs and place cross cuts on them.
2. Transfer them to a bowl and add red chili powder, turmeric powder, salt and mix it well.
3. In a pan heat oil and add marinated eggs. Stir fry them for 1-2 mins. Set aside.
Directions for Egg Korma Preparation:
4. In a deep pan heat oil and add green cardamom, cinnamon stick, black cardamom, cloves and saut for a minute.
5. Add brown onion, yogurt and cook for 2-3 mins.
6. Now add red chili powder, salt, turmeric powder, coriander powder, cumin powder and cook until oil separates.
7. Add fried eggs and mix it well. Garnish it with green coriander and serve.
8. Your Egg Korma is ready.
