Freshly made crepes stuffed with spicy vegetable mixture and served.

SAVORY VEGETABLE CREPES

Ingredients

½ cup refined flour (maida)
Salt to taste
Crushed black peppercorns to taste
Milk as required
2-3 fresh parsley sprigs
A pinch of baking soda
Oil for greasing
Stuffing
2 teaspoons oil
3-4 babycorn, blanched and finely chopped
½ medium green capsicum, finely chopped
¼ medium purple cabbage, chopped
½ teaspoon pav bhaji masala
Salt to taste
Crushed black peppercorns to taste
2 tablespoons finely chopped tofu
1 tablespoon cheese spread

Method

1. Mix together flour, salt, crushed peppercorns and some milk in a bowl to make a semi-thick and smooth batter.
2. Finely chop parsley, add to batter and mix well. Set aside for 10 minutes.
3. To prepare stuffing, heat oil in a non-stick pan. Add babycorn, green capsicum and purple cabbage and sauté for 1 minute.
4. Add pav bhaji masala, salt and crushed peppercorns and mix. Add tofu and cheese spread and mix well.
5. Heat another non-stick pan.
6. Add some water and mix to a thin batter. Add baking soda and mix well.
7. To prepare one crepe, pour a ladleful of batter in hot pan, spread to make a thin disc and cook for 1 minute. Put some stuffing in the center and fold.
8. Serve hot.
