Mrs Alyona Kapoor shares the recipe of chicken cooked in spicy homemade schezwan sauce. Do try !SCHEZWAN CHICKENIngredients ½ cup Kashmiri red chilli paste3 tablespoons oil 1 tablespoon finely chopped garlic 1 teaspoon finely chopped ginger 1 inch celery, finely choppedSalt to taste ½ teaspoon sugar 1 teaspoon vinegar Black pepper powder to taste1 tablespoon tomato ketchup2-3 spring onion bulbs, quartered and layers separated1 teaspoon soy sauce¼ cup stock2 teaspoons cornflourChopped spring onion greens for garnishing Method1. Heat 2 tablespoons oil in a non-stick pan. Add garlic, ginger and celery, mix and sauté for 1 minute. 2. Add red chilli paste, mix and cook till the oil separates and mixture thickens. 3. Add salt, sugar, vinegar, pepper powder and tomato ketchup, pepper powder, mix and bring to a boil.4. Heat remaining oil in non-stick deep pan. add onion ,chicken pieces, adjust salt according to taste and cook till chicken is done5. Add schezwan sauce, soy sauce and add stock, mix well.6. Add cornflour slurry, mix and cook for 2-3 minutes. 7. Garnish with spring onion greens and serve.
