Schezwan sauce/chutney recipe is nothing but chili garlic sauce. In India we call Schezwan sauce and it’s an fusion Indo-Chinese recipe. Ingredients include red peppers (dried red chilies) soaked in water besides loads of garlic and ginger, some onions, Schezwan peppers, soy sauce, white vinegar, sugar and little bit of ketchup.Schezwan chutneyIngredients quantity Onion chopped 2no bigGinger chopped 2tbspGreen chilies chopped 6-8no.Garlic chopped 2tbspRed chili paste 10-12no.Oil ½ cupStar anise 3no.Celery chopped 1tbspTomato ketchup ½ cupRed chili sauce ¼ cupBlack pepper powder 1 ½ tbspSoy sauce 1tbspVinegar 2tbspRed chili powder 1tbspBlack salt 1tspChaat masala 1tspSalt to tasteSpring onion greens for garnishMethod1. Take a pan add oil, chopped garlic, chopped ginger, chopped green chilies, star anise and mix it properly .2. Now add chopped onion and cook for 4-5 mins, now add chopped celery in it and mix it properly.3. Now add red chili paste, tomato ketchup, red chili sauce, black pepper powder, soy sauce, vinegar, red chili powder, black salt, chaat masala and salt to taste and mix it properly.4. Now cover with lid and let it cook on medium flame for 8-10 mins.5. After 8-10 mins our chutney is ready.6.
