My Second RAMADAN Menu Turkish Meatballs KOFTE With Eggplants & Semolina Dessert

I am sharing a delicious stew balanced with veggies, kfte, and chickpeas; and a dessert that doesn't have any eggs or oil. Great menu to share with your family and friends in Ramadan iftar or dinner, the whole year.
Ingredients for Kofte eggplant stew:
3-4 eggplants
1 cup cooked chickpeas
For the kofte meatballs:
1 onion
1/3 cup bread crumbs
400-500gr. ground beef
1 leveled tbsp tomato paste
1 tsp each salt, black pepper
about 1/4 cup water or as much as needed (you can also whisk an egg and use half of it)
For the base of the stew:
One onion and sweet capia red pepper
2 sweet or mild green peppers
1 tsp tsp tomato paste
1/2 cup tomato pure
salt, black pepper and paprika to taste
enough hot water
I pre-cooked the eggplants and koftes before bringing everything together. I used my new Instant vortex airfryer but gave you the options on how else you can cook them.

For the Semolina Cake dessert "ambal tatls":
1+3/4 cup semolina
1/3 cup flour
1 cup sugar
1 cup plain yogurt (drizzle from the watery part more if needed)
1/2 tsp baking soda
1 tsp each grape molasses and water (optional)
peanuts or almonds to decorate
for the simple syrup:
2 cups sugar
2 cups water
2-3 drops of lemon juice
