I am sharing a delicious stew balanced with veggies, kfte, and chickpeas; and a dessert that doesn't have any eggs or oil. Great menu to share with your family and friends in Ramadan iftar or dinner, the whole year.Ingredients for Kofte eggplant stew:3-4 eggplants1 cup cooked chickpeasFor the kofte meatballs:1 onion1/3 cup bread crumbs400-500gr. ground beef1 leveled tbsp tomato paste1 tsp each salt, black pepperabout 1/4 cup water or as much as needed (you can also whisk an egg and use half of it)For the base of the stew:One onion and sweet capia red pepper2 sweet or mild green peppers1 tsp tsp tomato paste1/2 cup tomato puresalt, black pepper and paprika to tasteenough hot waterI pre-cooked the eggplants and koftes before bringing everything together.
