A popular Sindhi sweet – sev is used to make this burfi

SEV BURFI

Ingredients

250 gms unsalted sev
2¾ cups grated khoya/mawa
1 cup sugar
A pinch of saffron
1 cup milk
½ tsp rose essence
A little ghee to grease
10-12 cashewnuts, chopped
10-12 almonds, chopped
10-12 pistachios, chopped

Method

1. Cook sugar with 1½ cups water in a non-stick pan, stirring till sugar dissolves.
2. Add a pinch of saffron and stir. Add sev and mix gently so that the sev do not break.
3. Add mawa and mix gently. Add rose water and mix gently. Add milk and mix.
4. Grease an aluminium burfi tray with a little ghee.
5. Add half the chopped cashewnuts, almonds and pistachios to the pan and mix.
6. Put the mixture into the greased tray, level the surface. Sprinkle the remaining nuts on top and set aside to cool down to room temperature.
7. Cut into squares and serve.
