Delicious seviyaan made with rice flour and steamed to perfection.

SEVIYAAN

Ingredients

2 cups rice flour
Salt to taste
4 tsps oil + drizzling + greasing
Jaggery powder to sprinkle
Coconut and jaggery milk to serve

Method

1. Heat a non-stick deep bottom pan, add 2 cups water and bring it to a boil.
2. Add salt, oil, rice flour and continuously keep mixing for a minute. Cover and cook for 5 minutes on low flame.
3. Transfer the rice flour mixture in a parat, knead while it is still warm. Continue kneading till it comes to room temperature.
4. Grease a chakli press fitted with sev attachment. Shape the prepared mixture into a thick long cylinder and stuff it in the chakli press.
5. Heat sufficient water in a non-stick deep bottom pan, place a banana leaf on the steamer and grease it with oil.
6. Pipe out the mixture and steam for 5-10 minutes.
7. Sprinkle jaggery powder and serve warm with coconut jaggery milk.
