Shahi Gur Walay Chawal

Ingredients for Jaggery Water:
Jaggery 500 g
Water 5 cups

Ingredients for Gur Walay Chawal:
Guard Sella Rice 3 cups
Water (for soaking) as required
Ghee 2-3 tbsp
Raisins 3 tbsp
Green cardamom 4-5
Fennel seeds 1 tbsp
Jaggery water
Guard Sella Rice (soaked)
Almonds 3 tbsp
Cashew nuts 1/4 cup
Murabba Ashrafi (green + red) as required
Cham cham as required
Silver paper as required

Directions for Jaggery Water Preparation:
1. In a pan add water and jaggery. Cook until jaggery fully melts. Set aside.
Directions for Gur Wale Chawal Preparation:
2. In a bowl add Guard Sella Rice and soak for 90 minutes.
3. In a pot heat ghee and add raisins, fennel seeds and roast for a minute.
4. Add jaggery water and cook until starts to boil.
5. Add Soaked rice and cook until 80% water dries out.
6. Add almonds, cashew nuts, murabba Ashrafi and steam over low flame for 5-10 minutes or until rice is fully done.
7. Dish it out in tray, garnish with cham cham and silver paper and serve. Your Shahi Gur Walay Chawal are ready.
