Shahi Seviyan
Ingredients for Seviyan:
Vermicelli (Seviyan) 500 g
Butter 1/4 cup
Khoya 1 ½ cup
Icing sugar 1/3 cup

Ingredients for Vanilla Custard Filling:
Milk 1 ½ Liter
Condensed milk 1 cup
Vanilla custard slurry (vanilla custard powder 3 tbsp + water 3 tbsp)

Ingredients for Lemon Curd:
Butter 1/4 cup
Egg yolks 5
Sugar 1/3 cup
Lemon juice 2-3 tbsp

Ingredients for Assembling:
Cooked vermicelli
Vanilla custard
Lemon curd
Almonds (chopped) as required
Pistachios (chopped) as required
Red cherry as required

Directions for Seviyan Preparation:
1. In a pan heat butter and add seviyan, roast for 4-5 minutes.
2. Add khoya and mix well. Add sugar and cook for 2-3 minutes. Set aside. Your seviyan are ready.
Directions for Vanilla Custard Preparation:
3. In a pan heat milk and bring it to boil. Add vanilla custard slurry and cook over medium flame until thick in consistency.
4. Add condensed milk and mix well. Your vanilla custard is ready.
Directions for Lemon Curd Preparation:
5. In a pan heat butter, add sugar, egg yolks, lemon juice and cook until sugar dissolves. Your lemon curd is ready. Chill in the refrigerator.
Directions for Assembling:
6. In a dish add a layer of cooked vermicelli, vanilla custard, and vermicelli again.
7. Garnish it with lemon curd, almonds, pistachios, red cherry and serve.
8. Your Shahi Seviyan are ready.
