Shakkarkand Chaat | Family Food Tales with Mrs Alyona Kapoor | Sanjeev Kapoor Khazana

A healthy and lip-smacking chat made using the delicious sweet potatoes.
SHAKKARKAND CHAAT

Ingredients

2 medium sweet potatoes, raw and unpeeled
2 tablespoons fresh pomegranate seeds (anardana) + for garnish
½ cup roasted peanuts
Sendha salt to taste
1 teaspoon chaat masala
4 tablespoons chopped fresh coriander
2-3 tablespoons lemon juice
Ginger, thinly sliced for garnish

Method

1. Wash sweet potatoes nicely and half them from between.
2. Heat a non-stick pan, add halved sweet potatoes. Cover and roast on medium heat for 20-25 minutes till they become soft. Don’t over roast them.
3. Peel the sweet potatoes once roasted. Cut them into cubes or bite sized pieces.
4. In a bowl add, cubed sweet potatoes and pomegranate seeds. Slightly crush and add peanuts, sendha salt, chaat masala. Combine well. Add 2 tbsp chopped coriander, lemon juice. Mix well. Add remaining chopped coriander. Mix well.
5. Transfer chaat in a serving bowl.
6. Serve immediately, garnished with thin slices of ginger and pomegranate pearls.
