A healthy and lip-smacking chat made using the delicious sweet potatoes.SHAKKARKAND CHAATIngredients2 medium sweet potatoes, raw and unpeeled2 tablespoons fresh pomegranate seeds (anardana) + for garnish½ cup roasted peanutsSendha salt to taste1 teaspoon chaat masala4 tablespoons chopped fresh coriander2-3 tablespoons lemon juiceGinger, thinly sliced for garnishMethod1. Wash sweet potatoes nicely and half them from between.2. Heat a non-stick pan, add halved sweet potatoes. Cover and roast on medium heat for 20-25 minutes till they become soft. Don’t over roast them.3. Peel the sweet potatoes once roasted. Cut them into cubes or bite sized pieces.4. In a bowl add, cubed sweet potatoes and pomegranate seeds. Slightly crush and add peanuts, sendha salt, chaat masala. Combine well. Add 2 tbsp chopped coriander, lemon juice. Mix well. Add remaining chopped coriander. Mix well.5. Transfer chaat in a serving bowl.6.
