Classic Italian pasta gets an oriental twist in this recipe. 1½ cups boiled penne pasta 2 chicken breasts, cut into 1 inch cubes2 tbsps blended sesame oil1 tbsp finely chopped garlic½ inch ginger, finely chopped2 spring onion bulbs, chopped3-4 shitake mushrooms, sliced6-7 button mushrooms, quartered1 pak choy, sliced 3 tsps light soy sauce2 tsps dark soy sauce1 tbsp corn starch slurry1 tsp brown sugar2 tbsps chopped spring onion greens + for garnishSalt to taste2 tsps toasted sesame seeds + for garnishMethod1. Heat sesame oil in a non-stick pan, add chicken and sauté on high heat for 3-4 minutes. Take the pieces out and set aside in a bowl.2. In the same hot oil, add garlic, ginger, spring onion bulbs, and sauté well for 1 minute. 3. Add shitake mushrooms and button mushrooms, and sauté well. Cook for 2-3 minutes.4. Add pak choy, light soy sauce, dark soy sauce, corn starch slurry, brown sugar, and mix well. 5. Add the prepared chicken pieces and pasta, mix well and cook for 1-2 minutes.6. Add chopped spring onion greens, salt, sesame seeds, and mix well.7. Garnish with chopped spring onion greens and sesame seeds.
