These Shrimp Cakes, made with shredded shrimps and a masala mix, deep fried till golden brown and crisp makes for a perfect appetizer!SHRIMP CAKESIngredients250 grams shrimps, washed2 medium potatoes, boiled, peeled and grated½ tsp turmeric powder2 green chillies, finely chopped1 tbsp malvani masalaSalt to taste1 tsp ginger-garlic paste1½ tbsps freshly chopped coriander leaves3 tbsps rice flour ¾ tsp red chilli powder1 egg, beatenPanko breadcrumbsGreen chutney to serveLemon wedges to serveMethod1. Take shrimps in a bowl, add potatoes, turmeric powder, green chillies, malvani masala, salt, 1 tsp ginger-garlic paste, chopped coriander, rice flour, and mix well. 2. Add red chilli powder and mix well. 3. Grease your hand with oil and take a portion of the prepared mixture, shape it into a ball, slightly flatten it and make a hole in the center.4. Dip the prepared mini cakes in egg and coat it with panko, set aside.5. Heat sufficient oil in a wok, deep fry the prepared shrimp cakes till golden and crisp. Drain on an absorbent paper. 6.
