Simple Roasted Squash with Goat Cheese/Easy Recipe

In this episode, we roasted acorn squash at 350 degrees F for about 45 minutes. Before baking, drizzle some olive oil, add some dried oregano, tablespoon of sun dried tomato, garlic and s&p. Rub over the inside of squash.

Once done, cut it into 1/4's, add crumbled feta, and arugula. Drizzle good quality extra virgin olive oil.

Makes a great side dish or an awesome lunch on its on. So healthy and delicious!
