This would be a great Crocktober recipe.Ingredients:500 mL (2 cups) dried cannellini beans1.25L (5 cups) chicken stockHandful cherry tomatoes1 onion, diced1 carrot, diced1 celery stalk, dicedSalt and pepper to taste5 mL (1 tsp) summer savoury5 mL (1 tsp) oreganoPinch hot pepper flakes4 garlic cloves, lightly crushed2-3 fresh thyme sprigs500g (1 Lb) fresh sausage cut in chunksCouple handfuls baby spinach, roughly choppedMethod: Place dried beans in a large bowl; cover with water 2” above the beans, and let stand overnight. Drain the beans. Add everything to the slow cooker, cover and cook on low until the beans are tender, about 7 hours.Lightly mash the beans, breaking up the tomato and garlic. Add the spinach, cooking just until the spinach begins to wilt.
