Smoked Tuna Saffron Baked Jolly Rice

PREP TIME: 10 MINUTES
COOK TIME: 45 MINUTES
SERVES: 4-6

INGREDIENTS
2 tbsp coconut oil
1 tsp cloves
100g smoked tuna, flaked.
1 medium onion
1 tbsp tomato paste
1 tbsp smoked paprika
1 tbsp salt
2 cups basmati rice
1 tbsp saffron
5 baby carrots, chopped.
1 cup Blanched green peas

DIRECTION
Heat coconut oil in a saucepan over medium heat, add cloves, stir for a few seconds then add smoked tuna and let it fry for 2 minutes
Add onion let sweat for a minute then add tomato paste and let it simmer for 3 minutes whiles stirring continuously to avoid burning
Add smoked paprika, salt, stir then add 300ml water and let it boil for 5 minutes
Add basmati rice, saffron, baby carrots, stir and let It simmer for 3 minutes.
