Soft and fluffy Idlis!! I am sure no one in the whole world can resist a plate of hot Idli swimming in Sambar, which is Tamil Nadu style or a platter of steaming Idlis on which delicious coconut chutney is liberally poured over, in Karnataka style! In fact, it's one of the most popular weaning foods - a much sought after delicacy by one and all. Also Idli Sambhar combo has earned the reputation of being one of the healthiest breakfast.

"What's surprising is that the dish does not originate from India! Food historian K.T. Achaya reckons that the idli could have come to India around 800-1200 CE from present day Indonesia, part of which was then ruled by Hindu kings belonging to the Shailendra, Isyana and SaƱjaya dynasties"

#Soft and Spongy Idlis#Soft Idlis with Idli Rava No need to grind rice!

Ingredients:

Idli Rava - 2 cups

White Urad Dal - 1 cup

Salt to taste

Oil as required

Method:

Soak Idli Rava and Urad Dal for 2 hours separately

After 2 hours, grind the Urad Dal, adding a few drops of water if required, into a smooth and fluffy batter - if the batter is tested in a small dish of water, it would float

Now, mix the soaked Idli Rava with the ground Urad Dal batter thoroughly well

Add salt as required and mix

Ferment overnight or for at least 8 hours

Then grease Idli plates and steam in a pot or Idli cooker for 10/12 mins or till non-sticky

Serve hot with tomato chutney or coriander chutney or sambar
