Interesting sourdough bread sandwich topped with bocconcini, tomatoes and basil and baked to perfection

SOUR DOUGH OPEN SANDWICH

Ingredients

1 sourdough bread
Garlic oil for brushing and greasing
4-5 fresh basil sprigs
8-10 bocconcini (fresh mozzarella)
8-10 red cherry tomatoes, halved
6-8 yellow cherry tomatoes, halved
Salt to taste
Crushed black peppercorns to taste

Method

1. Cut the sourdough bread into slices. Brush with garlic oil.
2. Rough chop basil sprigs. Halve bocconcini.
3. Preheat oven to 180ยบ C. Grease a baking tray with some oil.
4. Heat a non-stick grill pan. Place the bread sliced on it and grill till grill marks appear on both sides.
5. Place the grilled bread slices on the greased tray, top with red and yellow cherry tomatoes, bocconcini halves and some chopped basil, reserving some for garnishing. Sprinkle salt and crushed peppercorns.
6. Put the tray in the preheated oven and bake till the cheese melts.
7. Garnish with reserved basil and serve hot.
