Fried chicken inspired from the flavours of South India.SOUTH INDIAN FRIED CHICKENIngredients250 gms boneless chicken breasts, cut into ½ inch pieces¼ tsp turmeric powder1½ tsps coriander powder2 tbsps cornstarch8-10 curry leaves, shredded 1 tbsp ginger-garlic paste1 tsp red chilli powderSalt to tasteCrushed black peppercorns to taste1 egg1 tbsp lemon juiceOil for deep frying1 tbsp coconut oil½ tsp mustard seeds3-4 green chillies, slit8-10 curry leavesFresh coriander sprig for garnishMethod1. Take chicken in a bowl. Add turmeric powder, coriander powder, cornstarch, curry leaves, ginger-garlic paste, red chilli powder, salt and crushed black peppercorns. Break an egg and add the white part. Add lemon juice and mix well. 2. Heat sufficient oil in a kadai, add the marinated chicken pieces and deep fry till golden brown and crisp. Drain on an absorbent paper. Set aside.3. Heat coconut oil in a non-stick wok, add mustard seeds and sauté till they splutter. Add green chillies, curry leaves and sauté for few seconds. Add fried chicken, a pinch of salt, crushed black peppercorns and toss well.4.
