The addition of sambhar masala just turns it 'wow'!SOUTH INDIAN STYLE PULAOIngredients1 tbsp coconut oil1 tsp mustard seeds6-7 black peppercorns3-4 green cardamom7-8 curry leaves1 large onion, finely chopped2-3 green chillies, chopped1 medium carrot, cut into diamonds4-5 French beans, cut into 1 inch pieces1 large potato, cut into diamondsSalt to taste2 tbsps sambhar masala1½ cups basmati rice, washed and soaked½ cup green peas2 tbsps fresh coriander leaves choppedPachadi for servingMethod1. Heat oil in a nonstick pan add mustard seeds and once they splutter, add black peppercorns, green cardamom, curry leaves, onion and green chillies, sauté till translucent.2. Add carrots, French beans and potatoes, sauté for 2-3 minutes. Add salt and sambhar masala, sauté for a minute.3. Add rice and green peas, mix well. Add 2½ cups water and coriander, mix well.
