Looking for a quick and hearty lunch? This South-Indian style pulao is just perfect. The addition of sambhar masala just turns it 'wow'!

SOUTH INDIAN STYLE PULAO

Ingredients

1 tbsp coconut oil
1 tsp mustard seeds
6-7 black peppercorns
3-4 green cardamom
7-8 curry leaves
1 large onion, finely chopped
2-3 green chillies, chopped
1 medium carrot, cut into diamonds
4-5 French beans, cut into 1 inch pieces
1 large potato, cut into diamonds
Salt to taste
2 tbsps sambhar masala
1½ cups basmati rice, washed and soaked
½ cup green peas
2 tbsps fresh coriander leaves chopped
Pachadi for serving

Method

1. Heat oil in a nonstick pan add mustard seeds and once they splutter, add black peppercorns, green cardamom, curry leaves, onion and green chillies, sauté till translucent.
2. Add carrots, French beans and potatoes, sauté for 2-3 minutes. Add salt and sambhar masala, sauté for a minute.
3. Add rice and green peas, mix well. Add 2½ cups water and coriander, mix well. Cover and cook till done.
4. Add chopped coriander, mix lightly and serve hot with pchadi.
