Serves 4.2½ cups cooked spaghetti1 cup blanched and chopped spinach (palak)1 cup blanched and sliced mushrooms (khumbh) 1 tbsp olive oil 1 tbsp finely chopped garlic (lehsun)¾ cup chopped spring onions (whites and greens)½ cup fresh cream½ cup milk4 tbsp grated processed cheeseSalt to taste1 tsp dry red chilli flakes1. Heat the olive oil in a deep non-stick pan, add the garlic and spring onions and sauté on a medium flame for 1 minute.2. Add the spinach and mushroom, mix well and cook on a medium flame for 1 minute.3. Add the cream, milk, cheese and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.4. Add the chilli flakes, mix well and cook on a medium flame for another 2 minutes, while stirring occasionally.5. Add the spaghetti, mix well and cook on a medium flame for 1 more minute. Serve immediately.
