SPICED PRUNES CHUTNEY

Ingredients

1 ½ cups California Prunes
¼ cup tamarind (imli)
1 cup chopped jaggery
1 tsp red chilli powder
1 tsp roasted cumin powder
1 tsp fennel (saunf) powder
½ tsp dried ginger powder (sauth)
Salt to taste
¼ tsp black salt
Fresh coriander sprig for garnish
Red chilli for garnish

Method

1. Roughly chop the California Prunes.
2. Take tamarind in a bowl, add 1 cup hot water and set aside for 20 minutes.
3. Heat a non-stick pan, add the chopped prunes, jaggery, drain the soaked tamarind and add into the pan.
4. Add red chilli powder, roasted cumin powder, fennel powder, dried ginger powder, salt, black salt, and water and mix till the jaggery melts.
5. Mash the mixture with the back of the spoon till it comes together.
6. Take the pan off the heat and allow the chutney to cool.
7. Transfer the chutney into a serving bowl, garnish with coriander sprig and serve with lavash or the accompaniment of your choice.
