ALOO KI KATLI
Preparation time 5-10 minutes
Cooking time 15-20 minutes
Serve 2-4

Ingredients
For Aloo Ki Katliya
2 tbsp Mustard oil,
2-3 Cloves,
4-5 no. Black peppercorns,
4-5 no. Dry fenugreek seeds,
1 no. Black cardamom,
1 no. Green cardamom,
2 no. Dry red chillies,
1 tsp Cumin seeds,
1 inch Ginger (peeled & finely chopped)
5-6 medium Potatoes (peeled & sliced)
Salt to taste,
2 medium Onions, sliced,
1 tsp Degi red chili powder,
tsp Turmeric powder,
tsp Coriander powder,
cup fresh Tomato puree,
tbsp Ghee,
1 tbsp Tender Coriander stems, finely chopped,

For Garnish
Coriander sprig,

Process
For Aloo Ki Katliya
In a kadai, add mustard oil, once it's hot, add cloves, black peppercorns, dry fenugreek seeds, black cardamom, green cardamom, dry red chillies, cumin seeds and let it splutter well.
Add ginger, potatoes, salt to taste and saute it for a while until half cooked.
Add onions, degi red chili powder, turmeric powder, coriander powder and cook it well for 2-3 minutes.
Add fresh tomato puree, cover it with the lid and let it simmer well until cooked well .
Finish it with some ghee, tender coriander stems and mix it gently.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with roti.
