Bay leaf, 1 inch Cinnamon stick, 700 gms Sella Basmati rice (soaked for 30 minutes) For Egg Masala3-4 tbsp Ghee, 1 tbsp Oil, 1 no. Bay leaf, 1 inch Cinnamon stick, 1 no. Black cardamom, 2 no. Green cardamom, 1 no. Mace, 3 medium Onions, sliced, 1 no. Green chillies, slit into half, inch Ginger (peeled & chopped) tsp Turmeric powder, 1 tsp Degi red chili powder, 1 tsp Coriander powder, cup Curd, beaten, 10 no. Hard boiled Eggs, Salt to taste, 1 tbsp Tender coriander stems, finely chopped, 1 tsp Dry fenugreek leaves, crushed, 1-2 tbsp Saffron water, (optional) For Egg Mixture 4-5 no. Hard boiled Eggs, grated, 2 no. Green chillies (less spicy & chopped) 1 tbsp Coriander leaves, roughly chopped 1 tbsp fresh Mint leaves (roughly chopped) Salt to taste, tsp Degi red chilli powder, For Assembling Cooked Rice, 2 tbsp Ghee, Grated Egg Mixture, Cooked Rice, Remaining Egg Masala, For Garnish Green chili (less spicy & slit into half) Coriander sprig, For Raita 1 cup Curd, beaten, 1 no. Green chili (less spicy & chopped) inch Ginger (peeled & chopped) 1 medium Tomato, chopped, 1 tsp Saffron water Salt to taste, For Garnish A pinch of roasted cumin powder, Degi red chili powder, Coriander sprig, Process For Cooking RiceIn a handi or sauce pot, add water, once its roaring boiled, add salt to taste, bay leaf, cinnamon stick, sella basmati rice and get a quick boil.Cover it with the lid and cook it for 7-8 minutes on high flame.Strain out the cooked rice and transfer it to a tray for resting.For Egg MasalaIn a handi, add ghee, oil, once it's hot, add bay leaf, cinnamon stick, black cardamom, green cardamom, mace and let it splutter.Add onions, green chillies, ginger and saute it for 2-3 minutes until golden in color.
