Hey everyone! So excited about this new cookbook in my kitchen, Plant You: Scrappy Cooking, by none other than Carleigh Bodrug (@PlantYou ). I adapted this recipe from her cookbook in the spirit of no wasteI tried to incorporate any fruit or vegetable I had sitting around in my fridge or pantry, including the leftover zucchini I had from the night before, the wild dried oregano I had on my window sill, along with the fresh basil plant collecting sunlight in my studio. I also thought about using gochujang in lieu of harissa, but then I remembered I had exactly the right amount of harissa leftover from a recipe I made a few weeks ago.I love recipes that come together so easily and quickly.
