Today on #WorldCricEats I bring to you a classic Jamaican recipe, which also happens to be Andre Russels favourite! Spicy Fish –( so I am told) a whole red snapper, marinated with spicy jerk spices and crispy fried. Could this be the secret to ‘Russel Muscle’? #CWC19 #WIvPAK I am drooling already. SPICY FISH

Ingredients

1 red snapper fillet, cut into 3 inch pieces
1 lemon, cut into half
Salt to taste
1½ tsps paprika powder
1 tsp dried ginger powder
1 tsp all spice powder
1 tsp crushed black peppercorns
1 tsp curry powder
1 tsp cayenne pepper powder
1 tsp cumin powder
2½ tbsps olive oil
Lemon slices for garnish
Salad to serve

Method

1. In a shallow bowl, add the fish pieces, squeeze lemon on it. Add salt and rub well. Set aside for 15-20 minutes.
2. Add paprika powder in the same bowl. Add dried ginger powder, all spice, crushed black peppercorns, curry powder, cayenne powder, cumin powder, salt and 1½ tbsps oil. Rub well and set aside for 10-15 minutes.
3. Take a butter paper pieces and place the fish on it. Wrap from all the sides and set aside.
4. Heat remaining oil in a non-stick pan, place the fish on it. Cook for 1-2 minutes, flip, cover and cook till the fish is cooked completely.
5. Discard the butter paper, and place the fish pieces on a serving plate. Garnish with lemon slices and serve hot with salad.
